Overnight oats are the perfect cheap, quick, and healthy breakfast. I love them because I can just mix everything together the night before and enjoy a super filling and delicious breakfast the next morning!
Overnight oats can be made pretty much any way you want them, just use 1/4 cup of old fashioned oats and 1/3 cup of non-dairy milk for the base, then add any other fillings you want! If I have fruit left over in the fridge I love adding it to the mix.
Strawberry banana overnight oats is one of my favorite breakfast recipes. The bananas add a lot of sweetness and creaminess to the dish. I also made some chia seed pudding to layer with it, which is literally just 1 part chia seeds to 2 parts non-dairy milk.
This recipe comes out the cutest shade of pink when you mash the strawberries a bit before mixing!
- 1/4 cup old fashioned oats
- 1/3 cup non-dairy milk
- 1/4 cup non-dairy yogurt
- 1 tsp chia seeds
- 1/4 cup diced strawberries
- 1/4 cup sliced bananas
Combine all ingredients in a glass jar. Mash strawberries and bananas if desired.
Refrigerate overnight and top with fresh fruit.
