Vegan Pumpkin Overnight Oats Recipe

Here’s a super fun and festive recipe for Fall – Pumpkin Overnight Oats! Fall is my favorite time of year and all the fun flavors that come with the season make it even sweeter.

If you love pumpkin pie, pumpkin spice lattes, or any other classic Fall food featuring pumpkin, you’re going to love this recipe! It is super filling, healthy, and easy to make.

Pumpkin Spice Overnight Oats

Prep Time 5 minutes
Servings 1 person


  • 1/4 cup old fashioned oats
  • 1/3 cup non-dairy milk
  • 1/4 cup non-dairy yogurt
  • 1 tsp chia seeds
  • 1/4 cup pumpkin puree
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp ground cloves
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract


  1. Combine all ingredients in a glass jar.

  2. Refrigerate overnight and top with whatever you like. I used cacao nibs, pumpkin seeds, and banana.
