Vegan Budae Jjigae (Korean Army Base Stew) Recipe
Ingredients
  • 4 cups vegetable broth
  • 1 tbsp gochujang (Korean chili paste)
  • 1/2 tbsp gochugaru (Korean chili flakes)
  • 2 vegan sausages or hot dogs
  • 1 package instant ramen noodles
  • 1 cup spinach
  • 1 bundle enoki mushrooms
  • 1/2 package medium-firm sliced tofu
  • 1/2 cup chopped green onion
  • 1/2 cup vegan kimchi
  • 1/2 cup baked beans
Instructions
  1. Put all of the ingredients together in a shallow pot with the gochujang and gochugaru in the middle. 

  2. Pour vegetable broth over everything, turn the heat up and boil the stew.

  3. Allow the stew to cook and reduce the heat to low.
